Could you tell me if the Galileo mission 
can detect what happens  with the H2O of the 
comet Shomaker-levi after it hits Jupiter surface.

We cannot answer that directly.  What we CAN do is measure how much water IS
in Jupiter, so that we can figure out how much was in the comet vs how much
was in Jupiter when the impacts took place.
